I haven't tried making these yet but the pie crusts and donuts are delicious from GF Heaven. If you try these, please let me know how they turn out. :)

These soft gluten-free dinner rolls are so simple, and absolutely delicious. Every time I make them I have to stash a few or I won't get any, and I am the only one that has to eat gluten-free! 

Gluten-Free Dinner Rolls

1 pkg. Gluten-Free Heaven Bread Mix (white or whole-grain)
2 Tbsp sugar
2 eggs (or egg replacer)
1 tsp vinegar
1 1/2 c. cold milk (or dairy-free)
1/3 c. melted butter (or dairy-free)

Preheat oven to its lowest setting (typically around 170F). Combine all wet ingredients in a mixing bowl. Dissolve yeast in wet ingredients and stir briefly. Add bread mix. Using an electric mixer, beat until smooth and thickened, approximately 5 minutes.Grease a 9x13 pan. Using a large ice cream/cookie scoop or two spoons, scoop dough into pan in 15 equal balls. Turn off oven. Place dough in oven to rise until almost double in size, about 20-30 minutes. Remove dough from oven  and preheat to 350F. When oven is heated, place rolls in the oven and bake until golden brown, about 30 minutes. Enjoy!

Tips and Tricks
* cold milk makes the rolls rise more slowly, but it helps significantly with keeping the nice round shape when scooped into the pan.
*The dough may be made up to 3 weeks in advance and frozen. To do this, mix the dough, scoop the balls onto a greased cookie (leaving some space between each roll), then freeze. When the dough balls are frozen, place them in a freezer zipper bag, seal, and freeze. When you are ready to bake them, place the dough balls on the greased 9x13 pan, let thaw and rise, and bake as directed above.

 
Scoop dough onto greased 9x13 pan in 15 equal balls.
Let dough rise until almost double in size.
Bake until golden brown, then enjoy your perfect dinner rolls.
